Restaurateurs Marissa and Matt Hermer, Chef Ivo Filho Open Chez Mia
A new restaurant has opened in West Hollywood at 8478 Melrose Avenue, close to the corner of Melrose and La Cienega. Open from 5:00 p.m. to 10:00 p.m. seven days a week, according to Eater Los Angeles, the restaurant eventually plans on expanding to longer hours including brunch.
Opened by restauranteurs Marissa and Matt Hermer with entrepreneur Kurt Seidensticker, the kitchen is led by Ivo Filho, a culinary director at the Boujis Group, educated at Le Cordon Bleu in London. The Boujis Group is also responsible for The Draycott in Pacific Palisades.
Some of the dishes that Chef Filho has highlighted on his Instagram in the period before the restaurant opened on October 8 are the Caviar Goujere, Tart Tropézienne, a 72-hour fermented Fougasse bread that will be served with Normandy butter, and Bluefin Tuna Tartare and Caviar.
The Fougasse bread, dubbed Le Pain de Mia, sounds divine.
Among the restaurant’s classic cocktail offerings is the Corpse Reviver #2, just in time for Spooky season, made of Hendrick’s gin, Lillet Blanc, Cointreau, Pernod absinthe, lemon, a Hemingway Daiquiri made of Bounty White rum, maraschino liqueur, grapefruit, lime, and signature cocktails like Monet’s Lavender made of Nolet’s Silver gin, butterfly pea flower, lemon, clover honey, crystallized honey, saffron and L’Amour Toujours made of Haku Japanese vodka, strawberry, tarragon, lime, egg white, and Pernod absinthe.
